Pingree Hill is a special goat milk cheese aged 12-18 months in our underground cave. Firm, nutty and smooth on the tongue with butterscotch hints, and a long complex finish. The Nubian goat milk’s high butterfat makes this a rare cheese reminiscent of sheep milk’s Pyrenees’ style cheeses. Substitute for Parmesan or Romano in pasta or on a salad, or simply enjoy at table.
